Popcorn tofu 'chicken'

Overview

The fun thing about this recipe is that it has a slightly different texture depending on which brand of tofu you use; Tofoo is a little firmer, and Sainsbury's is a little fluffier. **Add the cajun spice mix to related stuff section**

Ingredients

  • 450g Tofu

  • 1 cup Panko breadcrumbs

  • 2 tbsp Cajun spice

  • 1 tsp Smoked paprika

  • 1 tsp Garlic powder

  • 6 tsp Nutritional yeast

  • ½ tsp Salt

  • Black pepper

  • ½ cup Soy milk

  • Vegetable oil for frying

Method

  1. Squeeze juice out of tofu until pretty dry.

  2. Crumble tofu into ~1inch bite-sized chunks.

  3. Get 3 bowls and put into each:

    1. Flour
    2. Soy milk
    3. Breadcrumbs and spices (make this one a mixing bowl).
  4. Dip the tofu pieces into flour, then the milk, then the breadcrumb mix, ensuring good coverage and place on a plate ready to fry.

  5. Heat the vegetable oil in a pan.

  6. Place 3-4 popcorn tofu pieces into the oil for a couple of minutes until it turns golden brown, ensuring the pan isn't overcrowded.

  7. Be careful when removing the tofu from the oil, place the cooked pieces on some kitchen roll to soak up excess oil.

  8. Repeat until all pieces are cooked - pop them on a baking tray in the oven for a few minutes to warm back up if necessary before serving with fries and mayo.
